Pumpkin Chocolate Chip Muffins


Delicious and moist, these pumpkin muffins will delight. They also make great mini muffins for a bite size treat.


Recipe:

1 2/3 cups flour 1/4 tsp. salt

1 cup sugar 2 eggs

1 tsp. pumpkin pie spice 1 cup canned pumpkin

1 tsp. cinnamon 1/2 cup melted butter

1 tsp. baking soda 1 cup chocolate chips

1/4 tsp. baking powder

Mix flour, sugar, pie spice, cinnamon, baking soda, baking powder and salt in a large bowl.

Beat together eggs, pumpkin and butter. Pour over dry ingredients and mix until just moistened.

Add chocolate chips. Spoon batter evenly into a greased muffin tin.

Bake at 350 degrees for 20-25 min.

Yield: 1 dozen muffins
